One of my all-time favorite, go to recipes is Guacamole. This isn’t just reserved for the islands, it’s a family favorite. Quick and simple as well. The chunky nature of the one bowl fixing is a natural on a boat. I’ve also used a food processor if you’d like a bit smoother dip. Either way, you’ll be glad you tried this recipe.

Quick Guacamole

Mmm... Guacamole!

3 large ripe avocados, peeled and mashed
1/2 cup finely chopped tomato, can use canned diced tomatoes, as well
1/4 cup diced onion
3 cloves garlic, minced
3 tablespoons minced fresh cilantro, or 2 teaspoons dry
1 jalapeno pepper, seeded and minced
1 tablespoon lemon juice
3/4 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon hot sauce
 
Combine all ingredients in a medium bowl; stir well. Cover tightly, and chill until ready to serve. Yield: 3 2/3 cups.

We like our guacamole with a bit more kick and I never actually measure the ingredients. I’m sorry to say, I’ve picked up my grandmother’s habit of eyeballing it. Once you make a recipe so many times, why dirty the measuring utensils?

I always serve guacamole with blue chips, on Mexican night and anytime I want a bit of a kick.

  1. Sorry I won’t be trying this recipe! DH and I have never aquired a taste for Avacado.
    🙁 I guess the families favorite dip would be one my mother made with a block of cream cheese softened, and minced onion and a bit of milk then blend until creamy. Just a simply onion dip for the potato chips. I make lots of things with out looking at the recipe. After a while you know the the amounts by heart. (Like choc. chip cookies.) I make chili and beef vegatable soup with out a recipe. Just dump in the ingrediants we like.

  2. My favorite dip is the Velveeta cheese, salsa combo. Talk about simple! =) But I don’t have to read a recipe book, and everyone loves it….lol. Almost TOO simple, but hey, that’s my style! Sounds like a great recipe Nancy, I’ll pass it along to my sister!

    1. Carrie, I love that time and again, you have the simple down pat. Believe it or not, the guacamole is just as simple, it would require a recipe for a short time, however. Let me know if your sister serves this for you.
