One of my favorite fall cookies is also a great remedy for seasickness. Ginger is a natural cure, but the combination of ginger with molasses reminds me of hayrides and bonfires. Don’t be afraid to double the recipe, you’ll be glad you did.

Cinnamon Gingersnaps
 
1 cup unsalted butter
2 cups brown sugar (do not pack)
2 eggs
1/2 cup molasses
4 cups whole wheat flour (you can substitute all-purpose flour if desired)
2 tablespoon ground ginger
3 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cloves
2/3 cup sugar
4 teaspoons ground cinnamon
 
Cream butter; gradually add 2 cups sugar, beating well at medium speed of an electric mixer. Add eggs one at a time, and beat well. Stir in molasses. Combine flour and next 4 ingredients; stir well. Add to creamed mixture, stirring well. Chill dough.

Combine 2/3 cup sugar and cinnamon. Shape dough into 1 1/2 inch balls, and roll in cinnamon-sugar mixture. Place 2 inches apart on greased cookie sheets. Bake at 350 degrees for 14 minutes. (Tops will crack.) Cool cookies on wire racks. Yield: about 4 dozen.

    1. Do I have a recipe for you…. They’re chocolate and instead of a chocolate kiss, mini Reese’s Peanut Butter Cups. I think they make great Valentine treats and would be perfect on your date nights on the cheap. 😉

  1. Yummy, I love gingersnaps, I am going to have to try these. My favorite, as well as my childrens are Pumkin Cookies … Moist and full of nuts and raisens. When the boys where little they nick named them Moon Cookies, I guess to then\m they resembled the surface of the moon! 🙂 Hugs…
